Per me autunno significa zuppe, creme e vellutate di verdure. Bollenti, profumate e con crostini croccanti, da gustare davanti al caminetto acceso...
Ingredienti per 4 persone: 1 spicchio di aglio, 400 gr di patate, 300 gr di ceci precotti, 500-600 ml di acqua, 2 rametti di rosmarino, sale e pepe quanto basta, crostini, 2 cucchiai di olio extravergine di oliva.
In una pentola capiente rosolare velocemente l'aglio, quindi aggiungere patate, ceci sgocciolati e rosmarino e rosolare per circa 3 minuti.
Aggiungere l'acqua calda e 1 cucchiaino di sale fino. Quindi cuocere per circa 20-25 minuti e/o fino a quando le patate risultano morbide.
Togliere il rosmarino e l'aglio e frullare fino ad ottenere una crema densa. Aggiustare sale e pepe.
Servire caldo con un filo d'olio e crostini.
